September Recipes

Here are the new recipes I tried in September...some really great ones that we're adding to our regular rotation.

Breakfasts
Applesauce Muffins (5 stars out of 5)
I used an egg instead of egg substitute. These were so moist and the crumb topping was delicious. I like that it used up some butternut squash puree I had in the freezer as well.

Whole Wheat Zucchini Bread (4 stars out of 5)
We went to the farmer's market and got the biggest zucchini for only $2. When I shredded it all in the food processor, it made 21 cups! This was the perfect way to use up a small part. Very moist and I loved that it used only whole wheat flour.

Main Dishes
Meatball Marinara Subs (4.5 stars out of 5)
I used these pizza meatballs, this pizza sauce, put it all on sub buns with some shredded mozza on top...popped them in a hot oven to toast them and served them. Delicious!

Sweet Potato Shepherd's Pie (2 stars out of 5)
Very disappointing! It was very bland. I'm still on the hunt for a good turkey and sweet potato pie because I think it could be really good.

Sides
Soft Pretzels (5 stars out of 5)
It's been years since I've had a yummy soft pretzel and these tasted exactly how I remembered them.

Zucchini Fritters with Chili Lime Mayo (3.5 stars out of 5)
These were really good...we're just not used to fried foods. The dipping sauce was SO good.

Cornbread (4 stars out of 5)
I'm still on the hunt for the perfect cornbread. This is better than the previous one we deemed our favorite but I still think we can do better!

What have you been cooking/baking lately?

Sounds delicious-I just baked some basa fillets with lemon juice and planning to try to cook rainbow trout-maybe with almonds
Was playing catch with a young neighbour and remember a recipe I found in a food and wine magazine for meatloaf-shaped like a football for football festivities-pretty easy to do -just use onion for the lacing on the ball -and meatloaf can be shaped to many special occassions-did a rabbit shaped one for Easter once-there was also a recipe for rattlesnake but I passed on that one

This is (was) my favorite cornbread, before we went GF. http://www.food.com/recipe/cornbread-109767 I adjust the sugar though, I don't like my cornbread too sweet. I've got a recipe for a sweet potato shepherds pie, made with ground beef though. It's really good, if you're interested I'll dig it up!

The applesauce muffins sound great, I'm going to try to make them gluten free. Yum!

I'm going to test drive the sweet potato shepherd's pie from the last month's Canadian Living and I'll report back.

Our most recent new recipe was pumpkin pie cupcakes. Delicious! Maddy has decided that we need to make lemon poppyseed muffins, so that's up next.

The pretzels were out...of...sight. I wish I had one right now.

The meatball subs were really good too.

I'm not a big cornbread fan and this one from Peter Reinhart is amazing. It has bacon in it, so it can't be that bad.

Oh I love when you post these recipes! I've been making tons of zucchini stuff lately too (the neighbor keeps passing me gigantic ones over the fence and they are really sweet so perfect for baking). I'll send you some recipes! We felt the same about the fritters too. Like my thighs were noticeably bigger in the morning haha!

I have been trying to make some new recipes lately and I might have to copy your post and do a write up of all the recent ones.
I definitely want to try your cornbread recipe.
